Fried Plantains

Is it just me or is February already turning out absolutely fabulous!?

I know, we’re only 3 days in, but… for some reason… I am in love with February 2016.

I’ll be the first to admit, I am nowhere near perfect and even though I help people on a daily basis to overcome health struggles and live a life of vibrancy, confidence, health, and happiness – I some times struggle, too. We all do, it would be weird if we didn’t. We learn from our struggles, right?

In January, I was kind of in a funk. We were travelling up until the beginning of January and didn’t return home until the 22nd, so all month I was kind of out of a routine and in vacation mode, which meant I wasn’t accomplishing all that I wanted to accomplish that month.

Now, don’t get me wrong, I think straying from your routine in absolutely necessary, especially if straying from your routine brings out feelings of anxiety, stress, and discomfort – that is a sign you actually need to step out of your comfort zone, push your limits, and go without a routine for a while, but for me, being without a routine all January left me feeling kind of all over the place and unproductive.

Over the past couple of days, I have began to do my morning ritual again, the one I was consistently doing prior to Christmas holidays and, just by doing this simple morning ritual, I feel like an entirely new person, back to my vibrant, positive, optimistic self. In other words, I’m out of my January funk.

My morning routine consists of:

  • Oil pulling
  • Tongue scraping
  • Journaling
  • Gratitude list (3 things every day)
  • Deep breathing
  • Warm lemon water (with sea salt)
  • Breakfast (with no distractions, all technology put away)

A large portion of my morning ritual consists of detoxing practices, such as oil pulling, tongue scraping, deep breathing, and warm lemon water. Journaling is also detoxifying for the emotions, actually. Something I am really excited to tell you about is my upcoming detox program. I realize I was not the only person in a funk this winter and that it is very common for people to feel out of balance in the winter months, so I created a 7 day online program to help people find their balance and gently detox this winter before we move into spring. Speaking of balance, you all know how much of a fan I am about building balanced plates. One of my favourite balanced meals consists of eggs and fried plantains, plus some veg… if they fit 😉 (hey, I told you I’m not perfect!)


Fried Plantains
Recipe type: Side dish
Prep time:

Serves: 1
Savoury pan fried plantains. A perfect side to any protein source, especially eggs!
  • 1 large green plantain, peeled and sliced
  • 1 tbsp ghee
  • Sea salt
  1. Heat ghee in a skillet over medium heat.
  2. When ghee is melted and hot, add plantains to pan, evenly spread out
  3. Lightly season with sea salt and cook until plantains are golden on one side
  4. Flip and cook until golden on the other side
  5. Remove from heat and enjoy immediately!

  1. You inspired me to try out this breakfast combination this morning…. DELICIOUS! This was the most simple breakfast but the most satisfying. Normally, I am most satisfied with having a few different things in smaller amounts, i.e. one egg + toast + fruit. Before making this combo, I was worried that I wouldn’t be satisfied after but I am content! So happy 🙂 Thanks, Meg, for sharing!
